Fish recipe: Citrus Angel
Fish is one of the easiest foods to cook on the braai, yet it is often not done properly and this is mainly because folks over-cook the fish. When braaing the fish you will need the coals to be at a moderate temperature, so cook your other meats first and then place the fish on the grill.
Ingredients: o Angel fish o 5ml salt and Ground black pepper o 100ml olive oil o Few sprigs of lemon grass chopped fine o Juice from ?? orange o Zest from ?? orange o 1 big clove of garlic- crushed
Make basting sauce:
Put olive oil, orange juice, orange zest, crushed garlic and lemon grass in a dish and mix. Place in fridge until the time comes to marinade the fish. Butterfly your Angel fish and clean the inside (or perhaps you may ask them to do this at the fish market ). Put the angel fish on one of those grills which closes, enabling you to turn it over without lifting it. Sprinkle fish on both sides with black ground pepper and coat with marinade, using a basting brush. Baste fish and grill on one side for a few minutes before turning over, continue to apply more marinade with each turn, just before the fish is done sprinkle the fish with the salt. Grill on either side for another 2 minutes and the fish ought to be done. Four minutes a side on medium coals is enough to cook your fish.
Serve the angel fish with a rocket and red onion salad, dressing it with a drizzle of balsamic vinegar and olive oil and you'll have your guests asking for more.
